Ingredients Serving: 2

  1. Brinjal 1 cubed
  2. Ladies finger 10 to 15 cut in 1 inch
  3. Potato 2 cubed
  4. Carrot 1 cubed
  5. Beans 7 to 8 cut in 1 inch
  6. Red chilli powder 1 tbsp
  7. Turmeric 1/2 tbsp
  8. Salt as per taste
  9. Ginger garlic paste 1/2 tbsp
  10. Chat masala 1/2 tbsp
  11. Coriander powder 1/ 2 tbsp
  12. Jeera powder 1/2 tbsp
  13. Oil for frying
  14. Curry leaves
  15. Mustard seeds
  16. 1/2 Lemon juice
  17. Coriander leaves for garnish

Instructions

  1. Chop all veggies clean and dry cubed and heat oil in a kadai for deep frying all raw vegetables in two batches until light brown . ( boil potatoes with pinch of salt before frying)
  2. Keep all fried veggies aside Heat a pan pour in some oil add mustard seeds let it crackle , curry leaves , ginger garlic paste fry til raw smell goes away.
  3. Put in all the fried veggies then add red chilli pwd , turmeric pwd , coriander pwd , jeera pwd , salt , chat masala nd stir . Let it cook for 5 min
  4. Add lemon juice and let it cook until all water gets dried up. Garnish with coriander leaves . Serve hot with pulao or naan Tangy tasty crispy veggies are ready
