Ingredients Serving: 4

  1. Purple eggplant (Remove the ends from the eggplant then slice lengthwise, about 1/2 inch – 3/4 inch )1 big size
  2. Corn flour 1/2 cup
  3. Bread crumbs 1 cup
  4. Egg beaten well 1
  5. Milk 2 tablespoon
  6. Chilli flakes 1 teaspoon
  7. Pepper 1 tablespoon
  8. Chilli powder 1 teaspoon
  9. Onion powder 1 teaspoon
  10. Oregano 1 teaspoon
  11. Salt to taste
  12. Oil for frying

Instructions

  1. Wash and remove the ends from the eggplant then slice lengthwise about 1/2 inches to 3/4 inches
  2. Now take a bowl beat the egg with milk keep aside take a plate spread the corn flour keep aside take another plate spread the bread crumbs with salt chilli powder chilli flakes onion powder pepper and oregano mix well keep aside
  3. Heat the pan add enough oil when oil is hot take eggplant slices roll it evenly on corn flour shake it to remove excess flour then drench it in the egg then roll it on a bread crumbs mixture then slowly slide this into hot oil
  4. Fry this for 5 minutes or until crispy and golden color remove and spread it on kitchen napkin paper
  5. Serve hot with ketchup or with grated carrot and lime wedges thank you happy cooking
