Ingredients Serving: 4

  1. 1/4 cup all purpose flour
  2. 3tbsp finely chopped broccoli
  3. 1tbsp canola or olive oil
  4. 4tbsp soft butter
  5. 1egg(or 1/4cup yogurt)
  6. 4tbsp unsweetened cocoa powder
  7. 1/4 cup granulated sugar
  8. 1/4cup brown sugar
  9. 1/4tsp Baking powder
  10. 1/2tsp Vanilla extract

Instructions

  1. Sieve baking powder and flour and keep it aside
  2. Whisk egg and sugar until well combined and creamy
  3. Use microwave or double boiler, melt butter, add oil and cocoa. Mix well. Add egg mix to this with vanilla extract . Mix until well combined
  4. Add cocoa mix to flour. Mix until flour is well combined. Finally add broccoli. Fold in gently
  5. Grease or line with parchment paper microwave safe square pan . Pour the mix and gently tap the pan
  6. Microwave for 3-4 minutes. Broccoli releases water hence it takes more than 3 minutes. Keep an eye on brownie after 3 minutes. Don't overcook else brownie will harden
  7. Allow it to cool. Cut and serve
