ABOUT Masala Jowari Ki Rotiyan..(Sorghum Flour Rotis) RECIPE

A perfectly made tasty, wholesome rotis that tastes good even on their own without any other accompaniments. And what i did here is, i tweaked it a bit with the addition of kasoori methi and chilli flakes for a change. With sliced onions and some pickle, it tastes super yummy though. I served them not only with these two but also eggplant fry as an extra accompaniment. Finger licking food for a cosy dinner in Winters.

Ingredients Serving: 4

  1. Jowar flour 2 cups
  2. Hot boiling water 3/4th cup
  3. Salt 1 tsp
  4. Red chilli flakes 1 tbsp
  5. Kasoori Methi 1 tbsp

Instructions

  1. Make a smooth batter using all the ingredients.
  2. Use a wooden ladle to mix it and later use your hands for kneading once you can bear the hot water.
  3. Water depends upon the quality of the flour used. So use it as required.
  4. Cover it and set aside for 15 minutes.
  5. Heat a griddle and start making the rotis.
  6. It is difficult to roll these and hence use a plastic sheet or a parchment paper to do it. Just keep tapping and rotating clockwise.
  7. Sprinkle flour on it while doing so. It helps in making them without sticking.
  8. Slide it along with that sheet or parchment paper slowly on the griddle because it is difficult to lift it with hands.
  9. With a cloth, apply some water on the top of the roti.
  10. Roast it on a medium heat. And flip it gently over to the other side.
  11. Cook until nicely roasted on that side too.
  12. You can make about 8 to 9 medium sized rotis with this recipe.
  13. Serve them hot with your choice of accompaniments.
