ABOUT KARELE KA HALWA RECIPE

Karela has various therapeutic properties and it is one of the healthiest vegetables. My mom-in-law used to make a variety of dishes with bitter gourd during my pregnancy and post delivery. This halwa is one of them. She would add extra ghee and dry fruits but I have reduced the quantity.

Ingredients Serving: 2

  1. Karelas / bitter gourd - 3
  2. Desi ghee / clarified butter - 3 tbsps
  3. Sugar - 6 tbsps
  4. Cardamom powder - 1/2 tsp
  5. Poppy seeds - 1 tbsp (dry roasted)
  6. Khoya / mawa - 3 tbsps
  7. Milk - 1/4 cup
  8. Almonds - 1 tbsp (sliced)
  9. Pistachios- 1 tbsp ( sliced)

Instructions

  1. Wash the karelas and peel them.
  2. Discard the seeds.
  3. Cut them into small pieces.
  4. Grind them in a mixie without adding water.
  5. In a pan heat ghee and add the ground karela paste.
  6. Stir fry for 5 minutes on medium flame until the water is dried up.
  7. Now add the milk and allow it to simmer for few minutes until the milk is evaporated.
  8. Next add the khoya and stir.
  9. Now add the sugar and keep stirring until the sugar melts.
  10. At this stage add the roasted poppy seeds.
  11. Keep stirring until the mixture starts leaving the sides. Add the cardamom powder.
  12. Add a portion of dry fruits to the halwa and save some for garnishing.
