ABOUT Fruit N Nut Cake RECIPE

An authentic traditional cake that is very famous. Made in a pressure cooker by me, it is the most delicious one served at tea-time in most of the houses. Made with just a few common pantry staples, it is also one of the most easily done. Enjoyed at Iftaar in the holy month of Ramadan, this is one of the most loved cake recipes. Dry Fruits and nuts of choice can be added in it. They can be either slivered or chopped or even powdered, it tastes equally awesome.

Ingredients Serving: 10

  1. Eggs 3 nos
  2. All purpose 1 1/4 cups
  3. Sugar 1/2 cup
  4. Vanilla essence 1 tbsp
  5. Cardamom powder 1/2 tsp
  6. Nutmeg 1/8 tsp
  7. Baking soda 1/4 tsp
  8. Baking Powder 1 Tsp
  9. Butter 1/4 cup
  10. Raisins 10 nos
  11. Cashews 12 nos
  12. Almonds 12 nos
  13. Pistachios 12 nos
  14. Ghee or butter 1 tsp

Instructions

  1. Beat eggs well with vanilla essence and sugar.
  2. Stir in butter too.
  3. Add flour as mentioned and can increase a little more depending upon the egg size but one thing to be remembered here is that the batter should be smooth.
  4. Heat a teaspoon of ghee and fry raisins and cashews and all the dry fruits that are to be added.
  5. Add them to the batter too.
  6. In a pressure cooker, heat about 2-3 cups of salt for 5-10 minutes.
  7. Cover with a lid but without any weights on a low flame.
  8. After 10 minutes, open the lid and place the cake tin on a stand placed inside.
  9. Cover again and cook until the skewer inserted comes out clean for about 20-25 minutes or so.
  10. The cake rises well, it is the proof of a well done cake. Do not open the lid often. Otherwise the cake will not rise well.
  11. Slice and serve at tea-time. It is the best accompaniment that can be served with tea or coffee.
  12. Store it in an airtight container and relish upto a week.
