Kutchi adadiya is a gujarat famous winter special pak..it's gujarat famous delicacy. The kutchi Adadiya is prepared using the black gram flour and dry fruits and spice powders.

Ingredients Serving: 4

  1. 1 cup black gram flour ( urad dal flour) (coarsely ground to a flour )
  2. 1 cup milk solids (mawa) (khoya)
  3. 1 cup clarified butter (ghee)
  4. 1/2 cup sugar
  5. 1/4 cup milk, lukewarm
  6. 1 tablespoon natural gum (gond) fried in ghee and crushed
  7. 1/4 cup almonds chopped
  8. 2 tablespoon cashew nuts chopped
  9. 2 tablespoon Raisins
  10. 1 tablespoon pistachios chopped
  11. 2 tablespoon dry ginger powder
  12. 1 tablespoon Cardamom Powder
  13. 1 tablespoon cloves powder
  14. 1 tablespoon cinnamon powder
  15. 1 tablespoon white pepper powder
  16. 1 teaspoon nutmeg powder
  17. 1 teaspoon mace powder
  18. 1 tablespoon peepramul powder (ganthoda powder)
  19. 1 tablespoon rosted poppy seeds
  20. Almonds flakes for garnish

Instructions

  1. Mix 2 tablespoon ghee and milk in black gram flour and keep aside for two hours.
  2. After two hours, sieve this flour, which turns like Rava.
  3. In a sauce pan add 1 cup of water and prepare 1 thread sugar syrup and keep aside. The purpose of preparing the syrup first is that it cools down before you finally pour it over the hot Adadiya mixture.
  4. add 1 cup ghee in pan and add sieved black gram flour .roast on low flame.
  5. On medium flame continuously stir well.When black gram flour turns into golden colour. At this stage add chopped nuts and Raisins. Stire well.
  6. When ghee begins to leave the sides of the pan. Add the crushed edible gum and saute on medium flame till it turns golden brown.
  7. Finally add the spice powder and Stir all ingredients until well combined and turn off the heat. After 2 minute, stir in the sugar syrup to the above adadiya mixture.
  8. Spread the mixture into a flat greased dish and allow it to cool completely
  9. Shape the adadiya mixture into pieces or a desired shape. Garnish with finely sliced badam and pistachios.
