ABOUT lebanese Stuffed Capsicum RECIPE

These red capsicums are stuffed with brown rice, herbs and baharat spice mix, an aromatic spice blend used in Middle Eastern cuisine.

Ingredients Serving: 3

  1. For baharat spice masala:::
  2. 1 tablespoon black pepper
  3. 1 teaspoon cumin
  4. 2 Cardamom pods
  5. 1/2 teaspoon cloves
  6. 1/4 teaspoon nutmeg
  7. 1 teaspoon coriander seeds
  8. 1 tablespoon paprika
  9. 3 stick cinnamon
  10. 1 teaspoon herbs
  11. For stuffing:::
  12. 2/3 cup brown rice
  13. 2/3 cup tomato finely chopped
  14. 1 big onion finely chopped
  15. 1/4 cup olive oil
  16. 1 tablespoon lemon juice
  17. 2 teaspoon baharat spice mix
  18. Salt to taste
  19. 3 big capsicum

Instructions

  1. Bland all baharat spice mix ingredients in to blender jar. Keep aside.
  2. Preheat oven at 170 d.c.
  3. In saucepan add brown rice,tomato, onion, herbs, 2 teaspoon olive oil , lemon juice, salt, and baharat spice mix mix well add water and cook for 15 minutes on medium flame.. spread the rice on a tray to cool.
  4. Meanwhile, Using a spoon scrape out the seeds .
  5. Fill the capsicums with the cooled rice and cover with the reserved tops. Drizzle with olive oil and sprinkle with salt. 
  6. Add half cup of water to the baking dish. and transfer to the oven. Bake for 30 minutes until the capsicums are tender .   Cool and arrange on a platter to serve.
