ABOUT Cream Of Broccoli Soup RECIPE

Ingredients Serving: 4

  1. 3 tbsp butter
  2. 1/4 cup chopped onions
  3. 3/4 cup broccoli florets
  4. 2 cups vegetables stock
  5. 2 tbsp plain flour
  6. 2 1/2 cups milk
  7. salt to taste
  8. nutmeg (jaiphal) powder 1/4 tsp
  9. For The Garnish: 1/4 cup broccoli florets , blanched

Instructions

  1. Heat 1.5 tbsp of butter in a deep pan, add onions and saute over medium flame for a minute.
  2. Add 3/4th of the broccoli and saute on a medium flame for 3-4 minutes.
  3. Add vegetable stock and cook on a medium flame till broccoli is cooked. Remove and keep it aside to cool.
  4. Blend broccoli mix to a smooth puree. Keep it aside.
  5. Heat the remaining butter in another deep pan, add flour and saute over medium flame for a minute
  6. Add milk and simmer for 5 minutes, while stirring continuously.
  7. Add salt, pepper ,nutmeg powder and mix well.
  8. Add the broccoli puree, mix well and simmer for another 3 to 4 minutes.
  9. Serve hot garnished with broccoli florets.
