ABOUT Italian Minestrone Soup RECIPE

Minestrone is a thick soup of Italian origin made with vegetables, often with the addition of pasta or rice. Common ingredients of this recipe include beans, onions, celery, carrots, and tomatoes.

Ingredients Serving: 2

  1. 1 tbsp olive oil or butter
  2. ¼ tsp mixed herbs
  3. ½ tsp pepper and salt to your taste
  4. ½ tsp sugar
  5. 2 tbsp baked beans (tinned) or ½ cup boiled rajma beans
  6. 3 medium tomatoes grated
  7. 2tbsp celery chopped
  8. Broccoli chopped 2 Tbsp
  9. 2 tbsp zucchini chopped finely
  10. Babycorn sliced thinly 2 tbsp
  11. 1tbsp carrots chopped finely
  12. 1 onion chopped finely
  13. 2 flakes of garlic chopped
  14. 2 tbsp macroni pasta (boiled)
  15. 5 cups of water
  16. 2 tsp cornflour mixed with 2 tbsp water
  17. 2 tbsp grated cheese to garnish

Instructions

  1. Heat olive oil or butter in a pan, add garlic and onion and saute for a while. Add all the veggies along with the grated tomatoes and beans saute for a while, then add water and cook till the water comes to a boil.
  2. Now add salt, pepper, mixed herbs, sugar and add the cornflour paste slowly and keep stirring to prevent lump formation. In the end add grated cheese and boiled macaroni.
  3. Serve hot with any bread of your choice.
