An easy pressure cooked tiffin sambar

Ingredients Serving: 4

  1. Vegetables of your choice ( Carrots, Capsicum, green beans, chow chow, brinjal) - 2 cups
  2. Tomatoes - 2 , medium sized, diced
  3. Onion - 2, medium sized
  4. Moong dal - 3/4 cup
  5. Turmeric powder - 1 tsp
  6. Hing - 1/4 tsp
  7. Ginger, finely chopped - 1 tsp
  8. Garlic - 4-5 cloves
  9. Sambar powder - 2-3 tbsp (adjust)
  10. Ghee - 1 tbsp
  11. Oil - 1 tbsp
  12. Salt to taste
  13. Curry leaves - 10-12
  14. Mustard seeds - 1 tsp

Instructions

  1. In a pressure cooker, add the diced veggies, moong dal, ginger, garlic, turmeric powder, hing and water just enough to cover
  2. Pressure cook for 3-5 whistles.
  3. Once steam is released, adjust the consistency of sambar by adding more water.
  4. Bring to boil
  5. In the meanwhile, heat the oil and ghee in a pan and splutter the mustard seeds.
  6. Add curry leaves, switch off. Add sambar powder and mix well
  7. Add seasoning to sambar and cook for another 2 minutes over high heat, stirring in between
  8. Serve hot with idli, dosas or pongal.

Can I use vegetable oil in the place of ghee?
