Ingredients Serving: 4

  1. Sooji - 2 cups
  2. Curd - 2 cups
  3. Palak puree - 2 to 3 cups
  4. Grated ginger - 1 tsp
  5. Black mustard seeds - 2 tsp
  6. Red chilies - 3
  7. Baking soda - a pinch
  8. Salt to taste
  9. Water as required
  10. Oil - 2 tsp

Instructions

  1. In a bowl, mix palak puree , sooji, curd, salt and grated ginger.
  2. Heat oil in a pan , splutter mustard seeds , add red chilies and saute for 2-3 seconds.
  3. Add seasoning to the sooji and palak paste.
  4. Rest for 2 to 3 hours.
  5. Add baking soda and mix well. Pour the batter to greased idli moulds
  6. Steam for 15 minutes over medium heat
  7. Allow to cool 5-10 minutes. Demould
  8. Serve hot with sambar or chutney.
