ABOUT Wheatgrass Coconut Cheesecake RECIPE

Wheatgrass juice is gaining a lot of popularity because of it extensive health benefits. A combination of wheatgrass and coconut makes this indulgent dessert little guilt free.

Ingredients Serving: 4

  1. Wheatgrass juice 2 cups
  2. 2 tbsp Sugar
  3. 4 tsp gelatin powder
  4. 1/4 cup lukewarm water
  5. 1/2 cup creamcheese at room temperature
  6. 1 cup coconut cream
  7. 1/2 cup sour cream
  8. 2 tbsp icing sugar
  9. 8-10 coconut cookies
  10. 2 tbsp coconut oil

Instructions

  1. For bottom layer
  2. Take the coconut cookies in a processor and add coconut oil. Crush and mix well
  3. Add the crumbs to the bottom layer in the cheesecake tin. Press tightly
  4. Refrigerate for a 10 -20 minutes.
  5. For Middle layer
  6. Take cream cheese and sugar in a mixing bowl and whisk for 4-5 minutes until soft and fluffy.
  7. Now add in the coconut cream and sour cream and whisk till well incorporated.
  8. Add in 1/2 cup of wheat grass juice or more to this until the colour appears light green. Keeping the consistency thick.
  9. Pour this mixture over the prepared crust and evenly layer it
  10. Refrigerate for 1 hour
  11. For the Top layer
  12. In a mixing bowl add in the water and gelatin and rest until it becomes spongy.
  13. In a pan, add the wheatgrass juice and sugar.
  14. Bring it to boil.
  15. Add gelatin and mix well,strain the juice
  16. Allow to cool and pour it over the cream cheese layer.
  17. Refrigerate for atleast 4- 5 hours
  18. Unmould the cheesecake carefully
  19. Slice and serve chilled
