ABOUT TURKISH TULUMBA(Fried Sweet Dough With Sugar Syrup) RECIPE

Tulumba is made of bits of fried dough steeped in lots of lemony syrup. The dough contains semolina and starch to keep light and crispy. It's a classic Turkish sweet prepared at home for dessert.

Ingredients Serving: 3

  1. Water 3/4 cup
  2. Butter 3/4 tablespoon
  3. Egg 1
  4. Flour(maida) 1 cup
  5. Corn starch 1/2 tablespoon
  6. Semolina 1 tablespoon
  7. For the Syrup
  8. Sugar 11/4 cup
  9. Water 1 cup
  10. Lemon juice 1/2 tablespoon

Instructions

  1. Melt unsalted butterin the hot water.
  2. Add flour and stir it on the medium heat.
  3. When it become unsticky and soft transfer the dough to another bowl so that it cools down quickly.
  4. Transfer the cooled dough to the mixing bowl add semolina and corn starch.
  5. Then start adding egg and mix well in a hand mixer.
  6. Mix well till it become smooth.
  7. Fill your piping bag with the dough.
  8. Pipe the dough into the frying oil. (The vegetable oil must be in room temperature).
  9. Cut the dough with an oiled scissor (do not use knife to keep dough shape).
  10. Turn up the heat low temperature.
  11. When they are fully browned transfer directly to sugar syrup.
  12. After 2 minutes take them out of the syrup, transfer to a plate.
  13. Before serving add lemony sugar syrup on top again.
  14. Directions for the sugar syrup
  15. Transfer water into a large pot over medium heat.
  16. Add sugar. When starts boiling add lemon juice and turn the heat off.
  17. Turkish Tulumba is ready to eat.
