Ingredients Serving: 6

  1. All purpose flour - 2 cup
  2. Suji - 1 cup
  3. Oil - 2 tbsp
  4. Carom seeds - 1/4 tsp
  5. Salt - to taste
  6. Oil - for frying
  7. For stuffing
  8. Soaked moong dal - 1 cup
  9. Oil - 2 tbsp
  10. Cumin seeds - 1/4 tsp
  11. Chopped green chilly - 1 tsp
  12. Ginger paste - 1 tsp
  13. Asafoetida / hing - a pinch
  14. Red chilly powder - 1/2 tsp
  15. Crushed whole coriander seeds - 1 tsp
  16. Crushed fennel seeds - 1 tsp
  17. Sugar - 1 tsp
  18. Salt - to taste
  19. Gram flour - 2 tbsp
  20. Chat masala - 1tsp

Instructions

  1. Heat oil in a pan.
  2. Add Cumin seeds,asafoetida,crushed coriander seeds,crushed fennel seeds
  3. Let them splutter and saute for one mins.
  4. Add chopped green chillies and ginger paste.
  5. Saute for one to two mins.
  6. Add gram flour and cook for 3 - 4 mins.
  7. Now add soaked moong dal and mix well.
  8. Add salt and half cup of water.
  9. Cover and cook on a low flame until the dal becomes soft.
  10. Add all dry ingredients and mix well.
  11. Press the dal from the back of the spoon to crush it a little.
  12. Now stuffing is ready.
  13. For making kachoris
  14. Heat enough oil in a pan for deep frying.
  15. First on high flame then make it medium or slow.
  16. Now divide the dough into equal size balls.
  17. Now flatten the balls with your palm.
  18. Place a small ball of stuffing in the center and seal it properly.
  19. Now roll the balls.
  20. It should be little thick.
  21. Place the kachori in the oil for frying.
  22. Fry in small batches.
  23. Deep fry in medium hot oil till golden brown.
  24. Drain and serve.
