Ingredients Serving: 8

  1. Chicken tikka, cooked   12 medium sized boneless pieces
  2. Spring roll sheets  8-10
  3. Onion, finely chopped 1, medium
  4. Fresh mint sprigs, finely chopped ,1 tablespoon
  5. Fresh coriander leaves, finely chopped   –   2 tablespoon
  6. Ginger, finely chopped 1 teaspoon
  7. Green chilli, finely chopped, 1
  8. Mint chutney   –   3 tablespoon
  9. Lemon juice 3 teaspoon
  10. Mayonnaise 3 tablespoon
  11. All purpose flour/ maida, for sealing   –   2 tablespoon
  12. Water as required to make slurry/paste
  13. Oil for frying

Instructions

  1. Cut the chicken tikka pieces into small dices and put it in a bowl.
  2. Add finely chopped mint, coriander leaves, green chilli, ginger, onion, 2 teaspoon lemon juice, 1 ½ tablespoon mint chutney, 2 tablespoon mayonnaise and mix well.
  3. Add salt
  4. Mix all purpose flour and water to a smooth paste/slurry
  5. Place a spring roll sheet on the work surface.
  6. Put generous amount of chicken tikka mixture diagonally, leaving the edges for folding.
  7. Now roll it tightly and seal the edges with the flour mixture/slurry
  8. Heat sufficient oil in a wok.
  9. Deep fry spring rolls till golden brown and crisp.
  10. Drain on absorbent paper.
  11. To make dip :
  12. Combine remaining mayonnaise, remaining mint chutney and remaining lemon juice in a bowl.
  13. Mix well and serve with spring rolls
