Ingredients Serving: 5

  1. For the Samosas : 500g/17.5oz potatoes
  2. 30g/1oz carrots
  3. 50g/2oz green peas
  4. 10g/0.5oz cilantro/coriander
  5. 1 tsp aloo bhaji
  6. 50g/2oz cauliflower
  7. 7g/0.25oz garlic
  8. 15g/0.5oz curry powder
  9. 1 tbsp oil
  10. salt, to taste
  11. black pepper, to taste
  12. Cornstarch slurry–2 tbsp cornstarch diluted in 2 tbsp water
  13. For the wraps: 4 egg whites
  14. 50ml/1.75fl oz water
  15. 20g/0.75oz coconut flour
  16. 1 tsp baking powder
  17. For the Tamarind Dip :30ml/1fl oz tamarind juice
  18. 50ml/1.75fl oz honey
  19. 7g/0.25oz fresh cilantro/coriander

Instructions

  1. For the Wraps Whisk all ingredients in a bowl to form a batter. The consistency should easily coat the back of a spoon. Add more flour if mixture is too thin, or more water if too thick. Coat a 10 inch non-stick pan very lightly with coco
  2. For the Tamarind Dip Whisk all ingredients in a bowl. Set aside until ready to serve.
  3. For the Samosas Wash, and peel all vegetables. Boil potatoes until soft enough for mashing. While the potatoes are boiling, finely chop carrots, cilantro, and cauliflower. Blanch the chopped vegetables and the green peas for about a minute
