these are fusion cupcakes,specially for festivals,whether it be Rakhi or Diwali or Holi ,these cupcakes base is vanilla sponge infused with Rasmalai flavors and pieces of Rasmalai,topped with Rasmalai again,so friends enjoy these cupcakes

for cupcakes-
in a bowl seive apf/maida
add baking soda in seive
add baking powder also
seive them altogether
seive sugar
in another bowl add curd
add milk
add oil
add vanilla essence and whisk them
add this wet mixture to dry mixture
chop some Rasmalai and add to batter
just mix it with spatula
fill this batter in cupcakes
leave 1/4 part of mould empty as they rise
bake in preheated oven for 20-25 minutes
at 180 degrees
check by inserting toothpick
if it comes out clean cakes are baked
if not bake for another 5 minutes
cool them completely
for Rasmalai-
boil milk
as it comes to boiling point add lemon juice
or vinegar
milk will curdle
seive it
discard whey
we are going to use paneer
mash with palms of your hands
it will turn soft dough like
make round balls and flatten them
in other pan add sugar and water
switch on flame
as it starts boiling add balls
keep flame high for 10 minutes
then slow down for 5-7 minutes
add cardmom powder
add saffron
cool down completely
boil milk 1/2 litre
add sugar and cardmom powder
add some strands of saffron
add Rasmalai and dry fruits
for cream frosting-
whisk cream till soft peaks are formed
add nozzle to piping bag
in piping bag color different shades
add whisk cream
now prick cupcakes with toothpick
add Rasmalai syrup
make roses on cupcakes
squeeze Rasmalai and remove
cut Rasmalai into half and place on cupcakes
