For filling: In a deep vessel kadai, put the oil and bring it to heat.
Once oil is hot, add onions and saute it for a min on high flame while stirring continuously
Then add all the veggies and saute for 2 minutes without cover and on high flame
Now add all the spices and sauces and mix it properly
Add noodles to it and mix it well
Cook for 5 more minutes while stirring continuously and then switch off the gas. Your filling is ready
For dough: Mix both the flours, salt and oil and knead a little tight dough with lukewarm water
Cover the dough and keep it aside for 10 minutes
For spring rolls: Divide the dough into equal parts and make balls
Roll them one by one just like rotis but in rectangular shape
Put noodles in the center in a line form and cover it from one side
On the other side, apply some water on the corners and cover the first part overlapping it
Repeat it from all the corners and see it should be covered from all the sides
Repeat the process with the remaining balls
Deep fry them on medium flame from all the sides till golden brown
Take them out and cut them into pieces and enjoy with the sauces of your choice
