ABOUT Rice flour spring rolls RECIPE

Favourite with kids, tried to use more of rice flour and less of all purpose flour for spring rolls to make it as a healthy version for kids

Ingredients Serving: 4

  1. For cover: 1 1/2 cup rice flour
  2. 1/4 cup all purpose flour
  3. Salt to taste
  4. 2 tablespoon oil
  5. Lukewarm water to make the dough
  6. For filling: 1 onion finely cut into spices
  7. 1 capsicum finely cut into slices
  8. 1 cup cabbage finely cut
  9. 1 packet boiled noodles
  10. 1 serving spoon oil
  11. 1 tablespoon soya sauce
  12. 1 tablespoon vinegar
  13. 1 tablespoon sweet chilli sauce
  14. 1 tablespoon tomato ketchup
  15. Salt to taste
  16. Chilli as per taste
  17. Oil for deep frying

Instructions

  1. For filling: In a deep vessel kadai, put the oil and bring it to heat.
  2. Once oil is hot, add onions and saute it for a min on high flame while stirring continuously
  3. Then add all the veggies and saute for 2 minutes without cover and on high flame
  4. Now add all the spices and sauces and mix it properly
  5. Add noodles to it and mix it well
  6. Cook for 5 more minutes while stirring continuously and then switch off the gas. Your filling is ready
  7. For dough: Mix both the flours, salt and oil and knead a little tight dough with lukewarm water
  8. Cover the dough and keep it aside for 10 minutes
  9. For spring rolls: Divide the dough into equal parts and make balls
  10. Roll them one by one just like rotis but in rectangular shape
  11. Put noodles in the center in a line form and cover it from one side
  12. On the other side, apply some water on the corners and cover the first part overlapping it
  13. Repeat it from all the corners and see it should be covered from all the sides
  14. Repeat the process with the remaining balls
  15. Deep fry them on medium flame from all the sides till golden brown
  16. Take them out and cut them into pieces and enjoy with the sauces of your choice
