Ingredients Serving: 4

  1. 2 big sized round brinjals
  2. 2 big onions
  3. 3 big tomatoes
  4. green peas 1/2 cup
  5. boiled potato 1 big
  6. salt as per taste
  7. red chilli powder 1 teaspoon or as per taste
  8. garam masala 1 teaspoon
  9. dry coriander powder 3 teaspoons
  10. green chillies 2 number
  11. Green coriander for garnish
  12. any vegetable oil 3 tablespoons

Instructions

  1. wash and wipe brinjals and prick them four to five places with knife
  2. now put them to roast on direct flame of cooking gas
  3. let its skin char completely and jeep rotating it while roasting
  4. cool it and remove its skin
  5. while brinjal is roasting boil the potato
  6. now take a pan heat it add oil after oil heats add chopped onions
  7. cook the onions till translucent at this point add green peas
  8. cook for a minute and then add chopped tomatoes
  9. add chopped green chillies
  10. cook till tomatoes turn mushy
  11. add skinned brinjals and boiled potato
  12. mash them with a masher
  13. add all the spices salt and keep cooking till the rawness os spices goes
  14. keep stirring all the while
  15. remove from gas
  16. garnish with green coriander and serve
