ABOUT Golibaje /Mangalore Bajji RECIPE

Golibaje is one of the famous deep fried evening snack of Mangalore region. Maida is a main ingredient in this recipe.

Ingredients Serving: 4

  1. Maida 1 cup
  2. Gram flour / Besan 2 tablespoon
  3. Buttermilk or curd 3/4 cup
  4. Water 1/4 cup
  5. Cooking soda a pinch
  6. Salt to taste
  7. Sugar 1teaspoon
  8. Red chilli powder
  9. Chopped curry leaves 2-3 sprigs
  10. Chopped green chilli 1 or 2
  11. Cumin seeds 1 teaspoon
  12. Oil to deep fry

Instructions

  1. Mix everything and prepare batter.
  2. It should not be runny( thicker consistency) refer pic
  3. Keep aside for about 30 minutes to one hour in warm place.
  4. Once again mix well.
  5. Heat oil in kadai.
  6. Scoop out the batter using fingers little by little and drop them in hot oil.
  7. Fry in medium flame till they turn golden brown.
  8. Serve with coconut chutney.
