Another name for Gujiya is Karanji (In Marathi). I prepared this sweet karanji for Diwali. Now a days everybody has become health conscious. So I baked this in air fryer. So no need of oil or ghee for frying. I have added Gulkand for rose flavour. Gulkand is a sweet preserve of rose petals. Everyone appreciated it as it was a baked and uniqe item of Diwali Sweets.
Mix 2 cups of All purpose flour, salt and melted Ghee together.
Rub the ghee evenly.
Add milk and make medium consistency dough.
Cover it and rest it for 15 minutes
Take a pan and keep it on a Gas stove to make filling
Add Coconut and sugar in it.
Once the sugar is mixed add khoya ,Dry Fruits, Gulkand,in it.
Add rose syrup at the end
Mix it properly and make sure not to make the filling dry.
Divide the dough into small balls.
Roll the balls to make small puri.
Add filling in the puri and seal it applying little ghee on the sides.
Join the edges of the karanji
Then press the Karanji with the help of fork.
Cover prepared Karanjis with wet cloth
Apply little ghee on the prepared karanjis with the help of brush.
Preheat the air fryer for 8 minutes
Keep the ready Karanjis in Air Fryer for baking at 180 degrees for 8 minutes at a time
Keep only 5 to 6 Karanjis at a time for baking
Bake it till it becomes golden brown in colour.
Keep all Karanjis in an airtight container.
