ABOUT Homemade Mumbai Bun Maska... RECIPE

Bun Maska is a very delicious yet a very easy recipe to make . They are primarily sold by Irani Cafe's in Mumbai . Irani Cafe's are Irani-styled cafes in South Asia . They were initially opened by Zoroastrian Irani immigrants to modern India and Pakistan in the 19th century . Today Hyderabad boasts the largest number of Irani cafes which are very popular for Irani Chai .

Ingredients Serving: 6

  1. FOR THE DOUGH :-
  2. All purpose flour 3 cups
  3. 3 tbsp milk powder
  4. Salt 1/8 teaspoon
  5. Yeast 3 tablespoon
  6. Sugar 1 teaspoon
  7. Warm milk 1 1/2 - 2 cups
  8. Oil 1/4th cup
  9. FOR THE FILLING :-
  10. Butter ( kept at room temperature )
  11. Or whipped cream
  12. Or fresh cream

Instructions

  1. FOR THE DOUGH :-
  2. Add the flour , milk powder , salt and oil to a large bowl .
  3. Stir in a teaspoon of sugar in warm milk and put in the yeast . Let it rest in a warm or hot place for a few minutes or till the yeast has started to bubble up and becomes frothy . Also it has a relaxing smell which shows that it is ready for use .
  4. Using the milk , knead the dough . If it so happens that more liquid is needed , either use milk or water .
  5. Let it rest in a warm place for a few hours or till the dough has risen to double it's quantity .
  6. FOR THE BUNS :-
  7. Once the dough is done , punch it down . And start to pull out sections and roll them into small and equal balls .
  8. You can make buns of any shape .
  9. I chose this shape .
  10. For this shape , roll out the ball of dough into a rectangle ,fold it and roll it into a cylinder .
  11. Let these rise for about an hour in a warm place .
  12. Bake them at 180 degree centigrade for about 25-30 minutes or till they have developed a golden brown colour .
  13. Let them cool completely .
  14. FOR THE BUN MASKA :-
  15. Cut up the buns through the centre .
  16. Fill them up with either the softened butter or whipped cream or fresh cream .
