Ingredients Serving: 6

  1. For the Crust Base:
  2. Hide and seek chocolate biscuits 8
  3. Bournvita biscuits 8
  4. Powdered sugar 1 tablespoon
  5. Salted Butter, melted 5 tablespoon
  6. For the filling:
  7. Good quality dark chocolate, chopped 2 cups
  8. Heavy cream 1 cup
  9. Bittersweet chocolate chips 1/4 cup
  10. For Garnishing:
  11. Fresh cherries, washed and dried 1 cup
  12. Unsweetened cocoa powder, for dusting 1 tablespoon
  13. Powdered sugar, for dusting 1 tablespoon

Instructions

  1. Making crust base:
  2. Preheat the oven to 180 degree centigrade with a rack in the lower-middle position.
  3. Pulse the cookies and sugar in a grinder to make fine crumbs.
  4. Add the melted butter and process until the crumbs are evenly moistened.
  5. The mixture should look like wet sand and hold together in a clump when you press it in your fist. If not, add extra tablespoons of water/milk (one at a time) until the mixture holds together.
  6. Transfer it into 6-inch springform pan and use the bottom of a glass or back of a spoon to press it evenly into the bottom.
  7. Place the crust in the oven. Bake for 8 to 10 minutes.
  8. Let the crust cool on a cooling rack while you prepare the filling.
  9. Making the Filling:
  10. Place dark chocolate chunks in a bowl and set aside.
  11. Heat the cream in a microwave safe bowl for 30 seconds or until you see bubbles.
  12. Remove carefully and pour evenly on chopped chocolate. Let it sit for 5 minutes undisturbed.
  13. Whisk the ganache and make sure there are no lumps. You'll get smooth and silky ganache.
  14. Assembling:
  15. Pour half of the chocolate filling into the cooled crust.
  16. Add chocolate chips and pour the remaining filling on top.
  17. Refrigerate until thoroughly chilled, at least 8 hours or overnight.
  18. Serving:
  19. Run a thin knife around the sides of the pan and remove the pan sides.
  20. Top with fresh cherries and dust cocoa powder and powdered sugar on top.
  21. Slice and serve chilled.
