Ingredients Serving: 6

  1. For the cookies
  2. Apf/maida 4 cups
  3. Sugar 1 cup
  4. Vegetable oil 1 cup
  5. Baking powder 1 tablespoon
  6. Eggs 4
  7. For the pastry cream
  8. Milk 2 cups
  9. Zest of 1 lemon
  10. Egg yolks 4
  11. Sugar 3/4 cup
  12. All purpose flour 1/4 cup
  13. For coating
  14. Simple syrup
  15. Red food color
  16. Yellow food color
  17. For the toppings
  18. Castor sugar 1 cup
  19. Few mint leaves

Instructions

  1. For the pastry cream
  2. Boil the milk along with the zest of the lemon. Simmer on medium heat for a few minutes. Strain and keep aside.
  3. In a large bowl whisk together egg yolks and sugar until thick and pale yellow.
  4. Add flour and whisk until well combined.
  5. Slowly whisk in the hot milk into egg mixture.
  6. Return the mixture to medium heat and stir constantly until cream thickens and begins to boil.
  7. Remove from heat and transfer to a large bowl and cover with cling wrap pressing down on the surface to prevent skin from forming. Let it cool completely.
  8. To make the cookies
  9. Preheat oven to 175 degrees centigrade
  10. Line a tray with parchment paper.
  11. Mix sugar eggs and oil.
  12. To this add flour and baking powder and mix.
  13. Make small equal sized balls and place them on the tray and flatten it a little so that the bottom is flat.
  14. Bake for 15 to 20 minutes or until the bottom has browned.
  15. Remove from oven and allow to cool.
  16. Meanwhile transfer the pastry cream into a piping bag and keep aside.
  17. After the cookies have cooled completely, using a knife scoop out some cookie from the underside to form an indentation.
  18. Place some filling in the indentation and use another cookie to close the filling.
  19. Dip the cookies in red and yellow simple syrup and coat with castor sugar and keep a mint leaf.
  20. Yummy Italian peach cookies are ready.
