Combine all dry ingredients in the order listed above except from salt.
Stir the yeast in before you add the salt, as yeast dosenot like salt.
Make a well in the center. Add the milk and egg in to the well and mix.
Knead the dough until the dough is smoothed and less sticky.
Then knead in the butter. While kneading you should every so often drop the dough from a height, this also helps stretch the gluten.
Place the dough in a bowl and spray some water , cover with clin film and leave for 2 hours.
Once the dough has risen, deflate the dough and transfer it to a floured surface.
Divide the dough equal 4-6 portion.
Cover with cling film and let this rest for 15 minutes.
Roll out each dough and place 1 and 1/2 tbsp of thick creamy custard on top, seal the sides by gathering the ends and shape it like ball.
Place the bun side down on a baking sheet
Cover the shaped buns with cling film and repeat with the rest of the dough.
Leave the buns to rise for around 1 hour, or until it's puffed up in size .
Brush the surface of the buns with whisked egg.
Mix the 3 tablespoon flour with enough water so it forma thick paste that stil runs. Place this into a piping bag and create a swirl on the top of each buns.
Bake this in a preheated oven of 180c for 20 minutes. Check it it's cooked when the surface has turned into a nice golden colour.
