ABOUT Eggless Black Forest cake RECIPE

I wanted to make a simple yet beautiful cake for hubby dear on his birthday and didnt have much time for preparations so made this eggless chocolate cake , recipe courtsey Khushboo Kothari from her blog . The cake turned out to be a yummy one and much appreciated by all .

Ingredients Serving: 6

  1. Flour 11/2 cup
  2. Powdered sugar 1 cup
  3. Cocoa powder 1/2 cup
  4. Baking soda 1 teaspoon
  5. Salt 1/2 teaspoon
  6. Milk 1 cup
  7. Oil 1/2 cup
  8. Vanilla essence 1 teaspoon
  9. Vinegar 2 teaspoon
  10. For Frosting
  11. Whipped cream 21/2 cups
  12. Canned cherries , chopped into pieces 15 to 20
  13. Few whole cherries
  14. Sugar syrup 1/2 cup
  15. Chocolate shavings 8 to 10 tablespoon

Instructions

  1. First to bake the cake, sieve all the dry ingredients together, flour, cocoa powder, sugar, salt and baking soda .
  2. Add vinegar to the milk and let it stand for a minute.
  3. Then add in the oil and vanilla essence to the milk vinegar mix.
  4. Add all the dry ingredients to the wet ones and mix only till the batter is smooth and no lumps, do not overbeat.
  5. Put the cake mix in a dusted and lined round pan and bake in a preheated oven at 180 degree C for 30-35 mins till a skewer comes out clean.
  6. Let the cake cool down a bit and then demould.
  7. After the cake is completely cool, using a knife slit it horizontally into two halves. slice the upper half too into a flat one if there is a dome.
  8. Put half of the sugar syrup on lower half and then coat it well with whipped cream.
  9. Spread the chopped cherries on the whipped cream and cover it with the upper half of the cake .
  10. Pour the rest of the sugar syrup evenly on the upper half of the cake and then frost it well on top and sides with whipped cream.
  11. Using the star nozzle or any other, frost the cake with whipped cream.
  12. Sprinkle some chocolate shavings and leftover cake crumbs ( the cut part from the upper half ) in the middle of the cake.
  13. Sprinkle some chocolate shavings on sides of the cake and garnish with whole cherries on the top.
  14. Chill in fridge for at least 2 hrs so that the cream sets and then serve.
