Ingredients Serving: 6

  1. Cocoa powder - 3/4 cup
  2. Hot water - 1 cup
  3. Yogurt - 1/2 cup
  4. Vanilla extract - 2 tsp
  5. All purpose flour - 11/2 cup
  6. Baking soda - 1 tsp
  7. Salt - 1/2 tsp
  8. Unsalted butter - 12 tbsp
  9. White sugar - 1 cup + 1/3 cup
  10. Refined oil - 6 tsp
  11. Eggs - 2
  12. Chocolate frosting :
  13. Chocolate (coarsely chopped) - 180 gm
  14. Unsalted butter - 1 cup
  15. Icing sugar - 2 cups
  16. Vanilla extract - 11/2 tsp

Instructions

  1. Whisk butter with sugar until fluffy. Add oil gradually while whisking the mix.
  2. Mix cocoa powder with hot water till it dissolves. Then whisk in the yogurt and vanilla extract into it.
  3. Sift flour, baking soda and salt together. Keep aside.
  4. Now into the butter mix, add in the eggs while whisking it.
  5. Now fold in the sifted flour mix and the cocoa mix into the butter - egg mix in 3 parts alternatively.
  6. Pour the cake batter into 2 greased cake tins (20 cm diameter each), and bake these at 180 ℃ for 30-35 minutes or until the toothpick inserted comes out clean.
  7. Let the cakes get cooled completely.
  8. To prepare the frosting, melt the chocolate using double boiler method (melting the chocolate in a heatproof bowl placed over a saucepan of simmering water).
  9. Now whisk the butter until smooth and then add the icing sugar . Whisk further and add vanilla extract.
  10. Then add the melted chocolate into the above and whisk until desired consistency is attained.
  11. Now apply some of the frosting generously on one of the cakes. Place the other cake on top.
  12. Cover layered cakes with the frosting and decorate as desired. I have also used lots of chocolate shavings on top.
