Ingredients Serving: 3

  1. FOR PANCAKE MIX: Super fine White rice flour 140gms
  2. Potatoe starch 45gm
  3. Tapioca starch 25gm
  4. Xanthum gum 1/4 tsp
  5. Baking powder 1 1/2 tsp
  6. Baking soda 1/4 tsp
  7. Salt 1/2 tsp
  8. Sugar 2 tbsp
  9. FOR PANCAKE: Full fat milk 1 1/4 cup
  10. 1 flax egg (1 tbsp flax meal + 3tbsp water)
  11. Unsalted butter 3 tbsp
  12. FOR MAWA RABDI: Full fat milk 2 1/2 cup
  13. Mawa/khoya grated 1 cup
  14. Sugar 1/2 cup
  15. Kewra essence 1/2 tsp *optional
  16. Saffron strands 1/8 tsp
  17. TOPPINGS: Roasted almond slivers 1/4 cup
  18. Chopped pistachios 1/4 cup

Instructions

  1. MAWA RABDI: Soak saffron strands in 2 tbsp warm milk.
  2. Heat remaining milk in a pan. Once it comes to boil, reduce the flame. Add grated mawa and cook till mixture reduces to half. Keep stirring in between.
  3. Add in sugar, kewra essence and soaked saffron milk. Boil for another 4-5 minutes. Keep stirring continuously. Switch off the flame and the it cool completely.
  4. PANCAKES: Mix in all dry ingredients. In separate bowl mix in wet ingredients. Fold in your dry ingredients to wet ingredients. Let the batter rest for 5-10 minutes.
  5. Heat the girdle. Add nearly 1/4 cup of batter. Cook for nearly 2 minutes or until bubbles appears on top. Flip it once and cook other side till it turns golden brown.
  6. ASSEMBLING: Stack 3,4 pancakes in a serving plate. Top it up generously with chilled mawa rabdi and desired amount of nuts of your choice.
