Healthy yet delicious...Hot and time saver...these pancakes should be tried once. Rich in proteins and minerals , good for maintaining cholestrol levels...these are baked , yummy, gluten free and dairy free. Adapted from healthy website

Ingredients Serving: 2

  1. Half cup buckwheat flour
  2. 1tsp Apple cider vinegar
  3. Half tsp baking soda
  4. 1tsp Vanilla Extract
  5. 1tsp Cinnamon
  6. 2 ripe banana
  7. Sugar or honey (optional)
  8. 2tbsp extra virgin olive oil
  9. 3tbsp water

Instructions

  1. Mash banana with a fork , some lumps are ok
  2. Mix buckwheat flour, Cinnamon, baking soda
  3. Add olive oil, water , vinegar, banana and vanilla extract..Mix well.if you wish to add honey or powdered sugar, mix it. The mixture will be thicker than the regular pancake like a puree. Don't dilute and make it like pouring consistency.it should be thicker
  4. Preheat the oven to 180. Line baking tray with parchment paper or silicon mat. Add 1/4 scant quantity on the mat and lightly flatten it. Keep a gap of more than an inch as it will expand.
  5. Bake it for 12-15 mins until firm and golden brown at bottom. You can get 6 pancake from this batter
  6. Allow it to cool slightly and immediately transfer it to plate. Garnish it and serve hot. Yummy delicious pancake ready to be devoured
