ABOUT Lasaniya rotla(Garlic flavored pearl millet flatbread) RECIPE

This is a traditional kathiawadi recipe prepared popularly in winters as green garlic is easily available during this season.These bajra rotlas smell heavenly when they are being cooked on a tavdi(earthen pan). Very nutritious dish as well and can be enjoyed with a cup of tea for breakfast or best with jaggery and ghee.

Ingredients Serving: 4

  1. Bajra flour-2 cups
  2. Green garlic-100 gms
  3. Ginger-1 inch
  4. Ghee-1 tbsp and more to apply on rotlas
  5. Salt
  6. Water

Instructions

  1. First wash the green garli and seperate the cloves abd green part.Chop greens finely.
  2. Now put the garlic cloves and ginger in mixer bowl and grind to paste.
  3. Take 1 tbsp ghee in a small pan and add the chopped garlic greens.
  4. Now add the ginger garlic paste and saute for a minute.
  5. Take bajra flour in a big bowl and add the garlic mix to it.Also add salt.
  6. Knead dough with warm water for about 3 to 4 minutes.The dough has to be of medium consistency.
  7. Now keep an earthen tawa or tavdi as we call it in gujrati on gas to heat.You can use nonstick pan also.
  8. Take a ball of dough.Sprinkle some dry bajra flour on your rolling board and keep the ball on it.Slowly flatten it into a thick circle with the fingers.This is traditional way of preparing rotla but you can keep the ball of dough in between plastic sheet and roll.
  9. Now pick the rotla and put it on hot tavdi.Apply water on the upper surface with your fingers or brush.
  10. Keep medium flame,let the lower surface become slightly brown.Then turn the rotla.
  11. Cook the other side nicely and then pick the rotla with tongs and put it directly on flame as we do for fulkas.The rotla will puff up.
  12. Remove from flame and apply ghee generously to rotla and serve hot with curd or ghee god(jaggery).
