ABOUT Chicken Schnitzel with barbeque sauce RECIPE

An Austrian originated receipe marinated with a blend of the sprig Syracuse spice and with some Indian spices for the extra spice as we Indians love more spice. This chicken schnitzel with the sprig spice I have served with some home made barbeque sauce again flavoured with sprig Syracuse spice alongwith some dark rum where the bold flavour of rum gets blended with the spices for a lovely tasty sauce and lemon and pepper dressed bell pepper salad. The sprig spice is a lovely blend of flavours which is in itself divine.

Ingredients Serving: 2

  1. Chiken breasts - 2
  2. For the marination :
  3. Half lime
  4. Sprig Syracuse blend - 2 tsps
  5. Red chilli powder - 1/2 tsp
  6. Turmeric - 1/4 tsp
  7. Salt to taste
  8. For the coating:
  9. Apf/ maida - 1 cup
  10. egg- 1
  11. Bread crumbs - 1 cup
  12. Coriander to season
  13. For the barbeque sauce:
  14. Small onion - 1
  15. Tomatoe sauce - 1/4 cup
  16. Dark rum - 1/4 cup
  17. Honey- 1/4 cup or lesser
  18. Sprig Syracuse - 2 tsp
  19. Water - 1/4 Cup
  20. Butter - 1 tsp
  21. Oil - 1 tbsp

Instructions

  1. Place the chicken breast on a wooden board and flatten using a pounder
  2. Now apply lemon and rub all spices for marination
  3. Leave it to marinate for minimum 4 hours in the fridge
  4. Preheat oven to 220°
  5. Beat an egg with a pinch of salt and pepper in a flat bowl
  6. Take APF and add a pinch of salt and pepper, mix and spread on a plate
  7. Take bread crumbs mixed with some chopped coriander in another plate
  8. Keep a tray spread with parchment ready
  9. Take a chicken peice and coat with APF
  10. Dust off excess and Place it on the beaten egg dish, coat both sides
  11. Now coat with bread crumbs on both sides
  12. Place on the baking dish
  13. Spray oil all over
  14. Keep it to bake for around 30 minutes
  15. For the sauce:
  16. Take butter in a pan
  17. Add the chopped onions first and saute till transperant
  18. Add the sauce, dark rum, honey, water and sprig spice
  19. Let it boil once, simmer for 5 to 6 minutes till it thickens a bit
