ABOUT Lauki Nazakat RECIPE

Lauki Nazakat is look like a royal dish. Delicious stuffed lauki made in spicy gravy. Normally my kids avoid to eat lauki/bottle gourd but this one is loved by all members of my family. Recipe courtesy by Neha Mathur thank you her for this lovely recipe but I did little change in recipe.

Ingredients Serving: 5

  1. Lauki/bottle gourd 250 grm
  2. For coconut chatni :-
  3. Grated coconut 1 cup
  4. Ground nuts 2 tbs
  5. Green chilli 3
  6. Curry leaves 7-8
  7. Garlic cloves 10 -12
  8. Ginger piece 2-3
  9. Lemon juice 1/2
  10. salt 1/4 tsp
  11. Ingredients of stuffing for lauki :-
  12. Chopped onion 1
  13. Besan 1 tbsp
  14. Salt 1/8 tsp
  15. Turmeric powder 1/4 tsp
  16. Red chilli powder 1/2 tsp
  17. Coconut chatni 2 tbs
  18. Roasted stuffed makkhana 1 tbs
  19. Oil 1 tsp
  20. For red gravy :-
  21. Onion sliced 1
  22. Tomato sliced 2
  23. Garlic cloves 6-7
  24. Oil 1/2 tsp
  25. jeera 1/2 tsp
  26. Turmeric pinch full
  27. Red chilli powder 1/2 tsp
  28. Salt 2 pinch
  29. Hing 2 pinch
  30. For white gravy :-
  31. Cashew 13-14
  32. Khus khus 2 tbs
  33. For final dish
  34. oil 2 tbsp
  35. Turmeric powder 2 pinch
  36. Kashmiri Red Chilli powder 1 tbsp
  37. Dhaniya jeera powder 1 tbsp
  38. Salt as account of your taste
  39. Garam masala 1 tsp
  40. Water 1 cup
  41. Fresh coriander leaves 1 tbsp
  42. Milk cream for garnish 2 tbsp

Instructions

  1. Take a lauki then remove the skin and scoop it.
  2. Add all ingredients of chatni into the mixi jar and make a chatni.
  3. Make coarsely mixture of chatni without adding water.
  4. Now take a pan add oil and keep on flame for simmer .
  5. Take a bowl add chopped onion besan, salt, red chilli powder and turmeric powder and mix well.
  6. Now add this mixture in pan and cook it for 7 to 8 minute or onion cooked well.
  7. Now shift the mixture of stuffing in a bowl then add coconut chatni 2 tbsp and roasted makkhana .
  8. Now mix well and keep ready the stuffing.
  9. Now take a bottle gourd and fill the stuffing in it.
  10. When it filled then cut it into slices carefully.
  11. Now take a pan add oil for simmer then add slices of bottle gourd and keep cooking for 7 to 8 minutes.
  12. After 7 to 8 minutes turn the slices and again cook for next 7 to 8 minutes.
  13. When it done shift it into plate .
  14. Now for red gravy take a pan add oil for simmer then add jeera and hing.
  15. Add chopped onion and tomatoes with garlic cloves for cooking.
  16. Add salt ,turmeric , red chilli powder .
  17. Cook for 10 minutes and remove from flame.
  18. Let it cool and then make a fine paste and keep aside.
  19. In a bowl add cashew and khus khus add some water and keep a side for 20 minutes.
  20. After that remove extra water and make a fine paste from it with adding little water if required.
  21. Now take a pan add oil for simmer then add red gravy.
  22. Cook for 7 to 8 minute.
  23. Add white gravy and keep cooking.
  24. Keep cooking for next 4 to 5 minute.
  25. Now add spices and again mix it.
  26. Add some water if needed then cook till the gravy turn little thick.
  27. Now gravy is done add gravy in serving plate.
  28. In serving plate arrange the stuffed bottle gourd slices and gravy.
  29. Sprinkle some coriander leaves and drop some cream in dish.
  30. Serve it with naan ,roti and Paratha.
