Baked Vegetarian Cheese Pasta

you will need a large oven proof casserole dish. prepare the pasta as instructed in the package. cook the pasta just under 1 minute as instructed in the packaging

while pasta is cooking, in a large sauce pot over medium heat, add in the olive oil infused butter until melted. add in mushroom and onion. saute until the onion begins to become translucent and the mushroom start to brown. add in garlic, carrot, celery and italian herbs. stir to combine well. add in the tomato puree and stir to combine well

by now your pasta should be just about ready. turn the heat off on the tomato mixture. add in the pasta into the tomato mixture. it is perfectly fine if you let some of the pasta water into the tomato. it will add more flavor depth. stir to combine well. season with salt and pepper

preheat oven to broil. pour the pasta into the casserole dish. lay the pasta out evenly. top with shredded mozzarella and wack into the oven. let it bake for about 5-8 minutes or until the cheese has melted. remove from oven, garnish with parsley and basil and serve! voila! baked vegetarian cheese pasta!
