ABOUT Tuna and Vegetable Turkish Muffins RECIPE

This is a savory Muffins, using Tuna and some vegetables along with Sprig Tangier spice blend. This can be served as evening snacks with a cup of hot tea. I have tried to innovate the recipe using the spice blend.

Ingredients Serving: 6

  1. 1 canned Tuna in water - discard the water and make it into flakes
  2. 1 medium size Carrot grated
  3. 2 Garlic Cloves minced
  4. 4 tbsp Red Capsicum finely chopped
  5. 4 tbsp Yellow Capsicum finely chopped
  6. 2 Green Chilli chopped
  7. 1 tbsp Coriander Leaves chopped
  8. 1 3/4 cup Wheat Flour
  9. 1/2 tsp Baking Powder
  10. 2 tbsp Sprig Tangier spice blend
  11. 2 Eggs
  12. 3/4 to a cup of Vegetable stock
  13. Salt if required
  14. 3 tbsp Olive oil

Instructions

  1. Spray the muffin tray with oil and keep it aside.
  2. Take a mixing bowl. Add the canned Tuna flakes, carrot, red capsicum, yellow capsicum, garlic, green chilli and coriander Leaves and mix it together.
  3. In another bowl, mix wheat flour, taginer spice blend and baking powder.
  4. In another bowl, beat the eggs well, add oil and beat it again.
  5. Now add the tuna and vegetables mix. Mix it well,
  6. Gradually add the flour and the vegetable stock. Beat it again till all the ingredients incorporates very well and forms into a batter. Add salt if required.
  7. Now fill 3/4 cavities of the muffin tray.
  8. Bake at 180 degrees celsius for 30 to 35 minutes in a preheated oven.
  9. After 30 minutes check the muffin with a tooth pick. If done,then remove the tray from the oven.
  10. Keep it aside till it cools a bit before removing the muffins from the tray.
  11. Serve it with a hot cup of tea.
