Pakoras are the favourite snacks in indian food.This time I made baigan pakora with a twist.

Ingredients Serving: 2

  1. 1 baigan (brinjal)
  2. 2 boiled and mashed potatoes
  3. 1 chopped green chilli
  4. 2 chopped garlic cloves
  5. 1/2 tsp jeera [cumin seeds]
  6. 4 tbsp besan
  7. 1 tbsp rice flour
  8. 1/2 tsp haldi powder [turmeric powder]
  9. 1/2 red chilli powder
  10. 2 tbsp oats
  11. Salt to taste
  12. 1 tbsp Tomato ketchup
  13. 1 tbsp green chilli sauce or dhaniya chutney
  14. Oil for deep frying

Instructions

  1. Wash the brinjal and slice into roundels, keep aside.
  2. Add green chillies ,garlic cloves,jeera and salt to the mashed potatoes and mix it
  3. Make small tikkies from it
  4. Take a bowl and add besan,rice flour,salt,haldi powder and red chilli powder and mix it
  5. Take a slice of baigan and spread tomato sauce on it and take another slice and spread green chilli sauce over it
  6. Put a tikki on tomato sauce spread slice and cover it with the other one and now dip it in the batter
  7. Spread the oats over it
  8. Pre heat oil in a kadhai and deep fry the pakoras
  9. Fry it till golden brown colour
  10. Switch off the flame and serve hot with a tomato and chilli sauce
