It is my all time favorite north lndian dish .

Ingredients Serving: 5

  1. 2 boiled and mashed potato
  2. 2 baigan (egg plant)
  3. 2 Large chopped tomato
  4. 2 medium chopped onions
  5. 2 chopped green chilli
  6. 10 garlic cloves paste
  7. 1 teaspoon panchforan
  8. 2 teaspoon roasted and crushed peanut
  9. 1 table spoon chopped fresh green coriander
  10. 1/2 stuffed redchilli pickle
  11. 1 +1/2 tablespoon mustard oil
  12. 1 table spoon fresh anardana [pomegranate seeds]
  13. Sslt to taste

Instructions

  1. Firstly, rinse the baigan in water
  2. Pat fry with a kitchen towel, apply some oil all over and roast it on a medium gas flame
  3. Keep the turning the baigan for 2-3 minutes on the flame, so that it is evenly cooked.
  4. Washed , peel and mash the roasted baigan
  5. In a kadhai heat oil
  6. Add panch foran, saute for few seconds
  7. Then add chopped chilli and garlic paste.
  8. Add the onion and saute the onions till translucent, don't brown them.
  9. Add the tomato and salt , stir well and cook 5 minutes
  10. Now add mashed potatoes and baigan and mix well
  11. Add red chilli pickle and peanut , mix well, switch off the flame
  12. Garnish with chopped coriander and Anardana
  13. Serve hot with khichdi, bati ,rice or roti .
