Firstly, rinse the baigan in water
Pat fry with a kitchen towel, apply some oil all over and roast it on a medium gas flame
Keep the turning the baigan for 2-3 minutes on the flame, so that it is evenly cooked.
Washed , peel and mash the roasted baigan
In a kadhai heat oil
Add panch foran, saute for few seconds
Then add chopped chilli and garlic paste.
Add the onion and saute the onions till translucent, don't brown them.
Add the tomato and salt , stir well and cook 5 minutes
Now add mashed potatoes and baigan and mix well
Add red chilli pickle and peanut , mix well, switch off the flame
Garnish with chopped coriander and Anardana
Serve hot with khichdi, bati ,rice or roti .
