ABOUT Besani Karela / Bitter gourd with Gram flour RECIPE

Sweet and sour semi gravy bitter gourd Sabzi. The taste is very different, it is very easy to make and less time consuming . The bitter gourd is cooked with onion, tomatoes and besan, the bitterness is balanced by added sugar.

Ingredients Serving: 3

  1. Bitter gourd medium size 3
  2. Tomato 1 large , chopped
  3. Onion 1 large, sliced
  4. Ginger 1 inches long, crushed
  5. Dry whole spices :-
  6. Whole cumin 1/4 tsp
  7. Whole fennel seeds 1/4 tsp
  8. Fenugreek seeds optional
  9. Dry powdered spices :-
  10. Turmeric powder 1/4 tsp
  11. Cumin powder 1tsp
  12. Garam masala 1/3 tsp
  13. Asafoetida 1/4 Tsp
  14. salt as per taste
  15. Oil 3 tbsp
  16. Besan 1/4 cup
  17. Coriander leaves chopped 2 tbsp

Instructions

  1. Cut bitter gourd in rings, remove seeds . Take a bowl add 1 cup water add 1/2 tsp Salt immerse the rings in water for 1/2 an hour
  2. Strain them, discard water
  3. Now add 1 tbsp oil in a pan, fry bitter gourds until they are lightly red in medium heat , with salt and turmeric powder
  4. Keep aside in a bowl
  5. Heat 2 tbsp oil in the same pan in high heat
  6. Add whole cumin and fennel Seeds ( Fenugreek seeds also if using)
  7. Let them splutter in medium heat
  8. Add asafoetida, saute for 30 seconds in low heat
  9. Make puree of tomato
  10. Add sliced onions and crushed ginger, saute until translucent in low heat
  11. Now onions turned light brown
  12. Add turmeric powder and salt, saute for 30 seconds
  13. Add besan , saute well, until light brown in low heat
  14. Add 1 /4 cup water
  15. Mix well with spices and besan
  16. Add fried bitter gourd rings
  17. Add tomato puree, saute until the raw smell of tomato puree goes off
  18. Now cover and cook for 5-7 minutes, check in between
  19. When gravy turns thick add GARAM masala and sugar. Check for salt also. Adjust as per your taste. Take off heat.
  20. Garnish with chopped coriander leaves , serve hot with plain rice or chapati.
