Punjabi kadhi is yoghurt and gramflour based sour, tangy and spicy curry which is derived from punjab and surrounding states.We find many versions of kadi like gujrati kadi which is bit sweet, rajasthani kadi and punjabi kadi which is most popular.

Ingredients Serving: 4

  1. Sour yoghurt 1 bowl
  2. Besan 2tblspn
  3. Salt 2tsp
  4. Red chilly powder 1tsp
  5. Water 3 glass
  6. Coriander powder 1tsp
  7. Turmeric powder 1tsp
  8. Pakoras: besan 1 cup
  9. Cauliflower 350 grams cut in florets
  10. 1 Tblspn oil
  11. Salt
  12. Jeera 1tsp
  13. Green chillies 2 chopped
  14. (Tempering)oil 1 tblspn
  15. Mustard seeds 1tsp
  16. Sliced onions 2
  17. Whole coriander seeds 1tsp
  18. Hing 1tsp
  19. Methi seeds 1tsp
  20. Coriander powder 1 tsp
  21. Red chilly powder 1 tsp
  22. Curry leaves handful

Instructions

  1. Mix besan by adding water slowly and whisking so that no lumps are formed. Mix all spices meant for gravy.Heat oil in wok and add this thin mixture while stirring it continuously on high flame. Once a boil comes, turn the flame low and stop stirring and let it cook for 30 minutes stirring occasionally
  2. Temper while kadhi is simmering.
  3. Pakoras:- Make a thick batter of besan and water.add oil and keep aside for 2 hours minimum.add salt and chillies.add cauliflower.Mix well and fry the pakodas over medium flame.keep on absorbent paper.Add them to kadhi.
  4. For tenpering:Heat oil and add hing, mustard seeds,methi seeds,coriander whole. When seeds splutter add curry leaves,Add onions and cook till they become brown.add red chilly powder,coriander powder and curry leaves.pour this over kadhi.cook at high flame for 10 minutes stirring occassionaly Kadhi is ready to serve. It can be garnished with green chillies and curry leaves.
