Wash, clean and tap dry the chicken breast pieces.
Then chop them into small pieces and keep it aside. You may use minced chicken available in the market too.
Heat oil in a pan.
Add the chopped onions and saute until they turn soft and light pink.
Next add the chopped garlic.
Then add the chopped ginger.
Saute until the raw smell goes off.
Next add 2 tbsp Sprig Genoa Spice mix.
Saute for about a minute.
Then add the minced chicken pieces.
Check salt levels and add if required.
Add crushed pepper powder.
Saute well for about 2 minutes.
Then cook covered for about 5-8 minutes.
Next add in the chopped spring onions.
Then add the grated carrot.
Close the lid and cook for about a minute.
Italian spiced chicken filling is now ready.
Allow it to cool. Meanwhile prepare the dough for the covering.
Take the wholewheat flour, all purpose flour and salt in a bowl.
Add water little by little and knead to form a firm dough.
Keep closed for about 15 minutes, and then knead again.
Then roll out the dough into discs, as we roll out for roti.
Using a circular mould or any bowl with sharp edge, cut out smaller circles.
Inside each circle place 1-2 tbsp of the chicken filling prepared earlier.
Add little grated cheese too.
Seal the edges to form the shape of momos.
Similarly prepare all the momos until all the filling and dough is used up.
Apply little oil on the steamer plate.
Boil water in a steamer and steam the momos for about 20 minutes.
Tasty Italian spiced chicken momos are ready to be served with tomato sauce.
