This is one of the most amazing combinations to use with pumpkin. Enhances flavor of Pumpkin and tastes simply heavenly.

Ingredients Serving: 4

  1. 2 cups diced pumpkin
  2. 1/2 cup soaked black chickpea
  3. 2 tablespoon oil
  4. 1/2 Teaspoon mustard seeds.
  5. Pinch asafoetida
  6. 2 green chillies slit.
  7. 1 teaspoon fennel seeds
  8. 1/2 teaspoon Turmeric powder
  9. 1 tablespoon ginger paste
  10. 2 tablespoon coriander powder
  11. 2 Tablespoon Kasuri meethi
  12. 1 Teaspoon Garam masala.
  13. Salt to taste.

Instructions

  1. Boil black chickpea till it's gets soft.
  2. Now Heat oil in a pan add mustard seed, fennel, green chillies and ginger paste. You can even add curry leaves.
  3. Allow it to fry for a minute.
  4. Now add boil chickpea, kasuri Meethi and diced pumpkin. Give it a mix.
  5. Now add Turmeric powder, garam masala, salt and Coriander powder.
  6. Mix it well and cover it with lid. Allow pumpkin to cook. It will take around 10 minutes.
  7. After 10 minutes check whether pumpkin is cooked or not. If it is done mix it and it is ready to serve. Tastes well with nice soft Jowar Roti or even with fulkas.
