ABOUT Aachari pork RECIPE

Its really a super tasty dish for party.In this dish meat cooked with "achari masala" which gives it a awesome taste.Here I have used pork meat,you can use any meat like chicken or mutton whatever you like.

Ingredients Serving: 4

  1. Boneless Pork meat-350 gram
  2. For boiling pork,
  3. Salt-1 teaspoon
  4. Turmeric powder-1/4 teaspoon
  5. Deggi mirch powder-1/2 teaspoon
  6. Cumin powder-1/2 teaspoon
  7. For boiled pork marination,
  8. Mustard oil-1 tablespoon
  9. Deggi mirch powder-2 teaspoon
  10. Salt-1 teaspoon
  11. Curd-3/4 cup
  12. For Aachari masala,
  13. Mustard seeds-1/2 tablespoon
  14. Nigella seeds-1/2 tablespoon
  15. Fennel seeds-1/2 tablespoon
  16. Cumin seeds-1/2 tablespoon
  17. Coriander seed-1/2 tablespoon
  18. Fenugreek seeds-1 teaspoon
  19. Dry red chilli-2-3 pieces
  20. Vinegar-1 tablespoon
  21. For cooking curry,
  22. For tempering in curry,
  23. Bay leaves-3-4 pieces
  24. Dry red chillies-3 pieces
  25. Panch phoron(bengali 5 spice mix)-1.5 tablespoon
  26. Asafoetida powder-3/4 tablespoon
  27. Carom(ajwain) seeds-3/4 tablespoon
  28. Other ingredients for curry,
  29. Ginger paste-1 tablespoon
  30. Garlic paste-2 tablespoon
  31. Onion chopped-1 large
  32. Tomato chopped-1 medium size
  33. Green chilli(Slit)-3-4 pieces
  34. Coriander leaves chopped-1.5 tablespoon
  35. Ginger Julienne cut-1 tablespoon
  36. Deggi mirch powder-1 tablespoon
  37. Cumin powder-1 tablespoon
  38. Coriander powder-1 tablespoon
  39. Black pepper powder-1 tablespoon
  40. Chat masala powder-1 tablespoon
  41. Turmeric powder-1/2 tablespoon
  42. Salt to taste
  43. Sugar-1 tablespoon
  44. Mustard oil-1/4 cup
  45. For garnishing,
  46. Ginger Julienne cut-1/2 tablespoon
  47. Green chilli slit-1 piece
  48. Red chilli slit-1 piece
  49. Fresh Coriander leaves-1/2 tablespoon

Instructions

  1. Boil the pork with all masala for boiling in water.Pork will be 70% boiled.
  2. Take boiled pork in a bowl and seperete the water.Don't waste the stock,we will use it later.
  3. Now marinate the boiled pork with all masala and curd for marination.
  4. Now in a dry pan,add whole dry masala for aachari masala and dry roast it for few minutes.
  5. Let it little bit cold and add vinegar.
  6. Put it in a blender and make a course paste.Here if you need you can add very little water to grind.Your "Aachari masala" is ready now.Keep it aside.
  7. Take oil in a pan where you can cook the pork.Allow it to heat.
  8. Add all masala for tempering.Let them crackle.
  9. Add chopped onion and allow it to fry.
  10. Add ginger and gerlic paste.Saute it until raw flavour is gone.
  11. Season with salt.
  12. Add chopped tomato.Cook it until it becomes soft.
  13. Add all dry spice powder except chat masala.Mix everything well.
  14. Add marinated pork into it.Mix it and cover it for 5-7 minutes.
  15. When oil is coming out from it,so that means masala is cooked perfectly.
  16. Now add pork stock in it little by little until pork is fully cooked.
  17. Cover the pan and let it cook.
  18. When its almost done,add chat masala and "Aachari masala" in it.Mix well.
  19. Add sugar and adjust the salt.
  20. Add chopped coriander leaves, green chilli slit,ginger Julianne.
  21. Cover for 3-5 minutes.
  22. Switch off the flame.Give it 10 minutes standing time.
  23. Serve in a serving dish.Garnish it with green chilli,ginger and coriander leaves.
  24. serve it in party with naan, paratha, rooti etc.
