ABOUT Paneer parantha roll RECIPE

A healthy tasty parantha loaded with cottage cheese and lots of vegetables.

Ingredients Serving: 4

  1. For parantha: Wheat flour 1/2 cup
  2. All purpose flour 1/2 cup
  3. Salt 1 tsp
  4. Oil 1 tbsp
  5. Water as required
  6. For Stuffing: Cottage cheese 1 cup
  7. Capsicum thinly sliced 1/2 cup
  8. Tomotoes thinly sliced 1/3 cup (deseeded)
  9. Onion sliced 1 cup
  10. Green chillies silt lengthwise 2-3
  11. Shredded cabbage 1/3 cup
  12. Ginger garlic paste 1 tbsp
  13. Garam masala 1 tsp
  14. Red chilli powder 1/2 tsp
  15. Chaat masala 1/4 tsp
  16. coriander powder 1 tsp
  17. Black pepper powder 1/2 tsp
  18. Salt to taste
  19. Oil/ Butter as required

Instructions

  1. For the dough: In a bowl take whole wheat flour, flour, salt, oil and knead a chapati like dough adding water as required.
  2. Cover the dough with a muslin cloth and keep aside.
  3. Meanwhile prepare the stuffing.
  4. Heat oil/butter in a pan add sliced onions, saute till light golden brown.
  5. Add ginger garlic paste saute till the raw smell goes.
  6. Now add thinly sliced tomatoes along with green chillies, saute for 30 seconds.
  7. Add shredded cabbage and capsicum saute for few seconds.
  8. Add coriander powder, red chilli powder, garam masala, black pepper powder, chaat masala and salt.
  9. Mix everything well and cook for another 1 minute.
  10. At last add cottage cheese (paneer) cut lenghwise, mix it well with the vegetables and switch off the flame.
  11. The stuffing looks like this once ready.
  12. Take the dough knead for 1-2 minutes again.
  13. Divide the dough in four equal portions and give a ball sized shape.
  14. Roll out the dough using rolling pin into 6-7" in diameter.
  15. Heat tawa over medium heat and cook the parantha nicely from both sides using oil or butter.
  16. Take out cooked parantha on a plate add 3-4 tbsp of the prepared stuffing in the centre.
  17. Tightly roll the parantha from one end to another and wrap with a silver foil.
  18. Similarly prepare rest the parantha roll.
  19. Serve with ketchup, tandoori mayonnaise or with green chutney.
