Hot spicy nagpuri style chicken curry

Ingredients Serving: 4

  1. Chicken 500 gms
  2. Onion chopped 5
  3. Green chillies slit 4
  4. Garlic 50 gm cloves
  5. Rice 2 tsp
  6. Dried coconut 20 gm
  7. Cashew 10 gms
  8. Whole spice (clove, peppercorn, cinamon, cardamom, star anise,cumin, ) 2 tsp
  9. Salt to taste
  10. red chilli powder 4 tsp
  11. Coriander leaves
  12. Turmeric 1 tsp

Instructions

  1. Wash chicken . And put to boil it with turmeric and 1 tsp salt.
  2. Drain and keep aside the stock
  3. In a pan dry roast all the whole spices. Remove and grind using lil water
  4. In the pan heat 1 tsp oil. Add the dried coconut till light golden. Remove. Grind to paste adding the cashew
  5. In the same pan fry onions and green chillies. Remove and make paste adding garlic and coriander
  6. Heat 4 tbsp oil in kadhai. Add onion paste fry till colour changes.
  7. Add the spice paste and coconut cashew paste. Fry for 10 min
  8. Add red chillie powder and salt. Fry till oil separates
  9. Add littke stock. Mix and fry till a snooth paste of masala forms. Keep adding little stock and keep stirring
  10. Add the chicken. Cook for 5 to 10 min in masala.
  11. Add stock and check consistency
  12. Serve hot
