Ingredients Serving: 4
For pancake: 1 cup boiled pumpkin purée
1 Cup Ragi Flour
1/2 cup all purpose flour
1/2 cup powder sugar
1/2 tsp baking soda
1 tsp Baking powder
1 Egg beaten
1 tsp vanilla essence
Pinch of salt
2 tsp oil
1 cup milk if need add more
1/4 tsp nutmeg powder
For caramelised milk: 2 cup milk
1/2 cup granulated sugar
Pinch of cinnamon powder
some apple slice,mixed fruit jam,choco syrup and some walnut and pistachio for complete and garnish the dish
Instructions
Take large bowl and whisk egg until stiff.add vegetable oil,pumpkin purée,vanilla essence and milk and whisk again.
In other bowl add both flour,sugar,baking powder,baking soda,salt,nutmeg powder and mix well.
Now add flour mixture in pumpkin and egg mixture gradually till all combine well
heat other pan add sugar, when sugar caramelised add milk and cinnamon powder in it and cook milk till just half in real quantity,when done switch of gas and keep aside it.
Now heat pan in medium flame and drop spoonful batter carefully on pan,take rest for min for cook the side.
when one side done flip it and again leave it to bake other side.
make all pancake like this.
when all done serve it with caramelised milk,chocolate syrup,and serve it with jam,walnuts and pistachio.
