Ingredients Serving: 4

  1. For the Naan-Whole wheat flour 2 cups
  2. Curd 1/2 cup
  3. Garlic Butter - 2 tablespoons
  4. Lukewarm water as needed
  5. Baking soda 1/4 teaspoon
  6. Sugar 1/2 teaspoon
  7. Onion seeds to garnish
  8. White sesame seeds to garnish
  9. For the Stuffing- Boiled and mashed potatoes 3
  10. Green chillies,2
  11. Garlic pods 10
  12. Ginger 1/2 inch
  13. Mustard seeds 1 teaspoon
  14. Hing 1/4 teaspoon
  15. Red chilli powder 1/2 teaspoon
  16. Haldi 1/4 teaspoon
  17. Curry leaves 10
  18. Lemon juice 1 teaspoon
  19. Green coriander leaves 1 tablespoon
  20. Green coriander-mint chutney- 2 tablespoon

Instructions

  1. Ready the Naans first- Sieve the flour 3 times.
  2. Take it in a big plate.
  3. Make a well in the center.
  4. Add in the curd, baking soda, salt, sugar and melted butter.
  5. Knead the dough
  6. It will be a very soft dough.
  7. Use little lukewarm water, in case its not coming together only with the curd.
  8. Make a smooth, silky dough.
  9. Cover with a lid and let it stand in a warm place for 3 to 4 hours.
  10. To ready the stuffing - Grind together the Green chillies, ginger and garlic.
  11. Heat 1 teaspoon oil in a pan.
  12. Add mustard seeds,hing and curry leaves.
  13. Pour this over the mashed potatoes.
  14. Add in the chilli paste.
  15. Add the salt, green coriander leaves ( finely chopped ) , haldi.
  16. Sprinkle the lemon juice.
  17. Mix it well. Keep aside.
  18. Check the Naan dough to see if it has doubled.
  19. Depending on the weather, the time taken will vary.
  20. Strain the chutney for 10 minutes and then use.
  21. Now,To make the stuffed Naan-Take a big size ball of the dough
  22. Roll like rotis.
  23. Apply a thin layer of the chutney.
  24. Stuff a tablespoon of the potato mixture.
  25. Cover it like stuffed parathas/ kachodis.
  26. Gently roll again to make 5 inches round Naan.
  27. Heat the Tawa and roast like one does for Chappatis, Rotis, Phulkas etc.
  28. Apply a thin layer of melted butter and sprinkle sesame seeds and kalonji before serving.
  29. Serve hot.
