For the filling :
Potatoes - 2 (small cubes)
Peanuts/groundnuts - 3 tbsp
Raisins - 12-15
Turmeric powder - 1/2 tsp
Red chilly powder - 1/2 tsp
Cumin Powder - 1/2 tsp
Ginger paste - 1/2 tsp
Garam masala powder - 1/8 th tsp
Salt
Refined oil
Samosa dough :
Maida - 1.5 cups
Oil for kneading - 3 tbsp
Salt

Instructions
Heat pan with oil, fry the raisins and ground nuts and keep them aside.
In the same oil, add cumin seeds, then add the cubed potatoes.
Fry them for 2 minutes and then lower the flame.
Add the ginger paste, all the masala and salt. Cook on low flame with a lid on till they are cooked. Sprinkle garam masala powder.
Add the fried peanuts and raisins. Cool the mixture.
Knead a dough with the ingredients mentioned above. The dough should not be soft but stiff enough that can be rolled.
Roll out small round rotis out of the dough. Take one of the rolled roti, cut it into half.
Take one of the halves, apply little water on the cut edge, bring one end to join the other. This way it makes a pocket.
Take little of the potato mixture, and put it into the pocket. Apply little water on the open part, and bring it to the closed end to form the samosa.
Fry them in medium heated oil.
P.S : add a tsp of sugar to the filling while cooking and stir. This brings out extra flavour.
