Dum chhole is a easy and evergreen receipe. You can make this on birthday parties, dinner party, lunch n specially for your vegetarian guests. You can serve dum chhole with fried rice, bhature, puri and paratha as well.

Chickpeas( kabuli chhole) 250 gms
Onion big size 3-4
Black Cardamom 1
Green cardamom 2
Cloves 3-4
Cinnamon 1 inch
Javitri
Dry red chillies 6-7
Bay Leaves 1
Pinch of hing
Cumin seeds 1/2 tsp
methi seeds 1/2 tsp
Mustard oil 2-3 tbsp
Refined oil 1 tbsp
Ghee 1 tsp
Garam masala powder 1 tsp
Turmeric powder 1/2 tbsp
red chilli powder acc to taste
Salt to taste
Sugar 1/2 tsp
Coriander powder 2 tsp
Cumin powder 1 tsp
black pepper powder 1 tsp
Kashmiri mirch powder 1 tsp
Grated ginger 1 tsp
Garlic paste 1 tbsp
Coriander leaves
Instructions
Firstly soak the chickpeas in water for overnight. Take a pressure cooker put raw mustard oil without heat and all the ingredients except Garam masala and mix them well like this.
Put 4 cups of water and now close the lid.
Now switch on the gas and wait for total 5-6 whistles. When first whistle comes then turn the gas on low flame and wait for another whistles.
After that switch off the flame and open the lid when the pressure is released.
Now switch on the gas and mix well. If you need more gravy then add some water & take this to simmer in low flame.
In last add Garam masala powder and Kashmiri mirch if you need more.
Garnish with Coriander leaves and serve hot with fried rice in lunch or dinner.
