Ingredients Serving: 4

  1. For mix veg Burger patty- Boiled potatoes, 2
  2. Grated carrot, ½ cup
  3. Grated cabbage, ½ cup
  4. Grated paneer, ¼ cup
  5. Small onion, 1
  6. Spinach leaves, 5
  7. Rice flour, ¼ cup
  8. Rawa, 2 tablespoon
  9. Toasted bread crumbs, ¼ cup
  10. Red chilli powder ,1 teaspoon
  11. Dhania powder, ½ teaspoon
  12. Jeera  powder, ½ teaspoon
  13. Salt to taste
  14. Green chilli, 1
  15. Garam masala powder, ½ teaspoon
  16. Ginger-Garlic paste, 1 teaspoon
  17. Oil as needed
  18. For the Bread Buns-
  19. 2 cups whole wheat flour
  20. 1 teaspoon instant yeast
  21. 1 teaspoon sugar
  22. 1 1/2 cup milk ( Increase or decrease depending on the flour quality )
  23. 2 tablespoon oil or butter
  24. Salt to taste
  25. 1 tablespoon melted butter to apply on the buns
  26. White sesame seeds,1 tablespoon
  27. Mayonnaise, as needed
  28. Tomato ketchup as needed
  29. Grated cheese, 50 grams
  30. Chopped onion, 2 tablespoons
  31. Chopped capsicum, 2 tablespoons

Instructions

  1. To make the Burger patty-Chop the onion very finely.
  2. Mash or grate the boiled potatoes.
  3. Blanch the spinach leaves.
  4. Squeeze out the water and chop very finely.
  5. In a non stick pan, heat 1 tablespoon oil.
  6. Add in the onion.
  7. Cook till translucent.
  8. Now, in goes the ginger garlic paste.
  9. Saute just a bit.
  10. Add the cabbage, carrot, spinach leaves, green chilli, mashed potatoes, paneer and all seasonings.
  11. Stir fry so that it all gets mixed well.
  12. In a few minutes, the mixture will thicken up.
  13. Let it cool completely.
  14. Add in the rice flour, bread crumbs.
  15. Check and adjust seasonings.
  16. Make small rounds.
  17. Coat with rawa by dipping in it.
  18. Press each patty to flatten a bit.
  19. Shallow fry on non stick pan or tawa till cooked on both the sides.
  20. Ready all patties like this.
  21. To make the bread buns-In a deep bowl, take all the ingredients for the bread.
  22. Start kneading the dough for about 12 minutes.
  23. It will be very soft at first, but will slowly come together
  24. Cover and Keep in a warm oven or any kitchen cabinet to double up.
  25. Always, keep the rounded ball,seam side down.
  26. If keeping in a warm oven the raising time is greatly reduced.
  27. Else, Depending on the weather it will take about 1-2 hours.
  28. Gently punch it once and remove some dough to make balls of equal size.
  29. Roll out a ball.
  30. Apply one layer of mayonnaise and ketchup mixed together.
  31. Also, put in finely chopped onion and finely chopped Capsicum
  32. Place the patty.
  33. Cover the bun, like we do for kachoris or parathas.
  34. With the help of the palms, gently give nice, clean shape by flattening a little.
  35. Ready all buns like this.
  36. Place on a lined baking tray.
  37. Brush with melted butter.
  38. Sprinkle white sesame seeds.
  39. Keep for second rise for 20-25 minutes.
  40. After 10 minutes, preheat the oven at 180 degrees for 10 minutes.
  41. Pop in the baking tray in the oven
  42. Bake for 10 to 12 minutes.
  43. Remove when done.
  44. Serve hot alongwith a serving of preferred salad.
