ABOUT Cool Jelly Cashew Kheer RECIPE

It's an innovative fusion of Jelly and Kheer. Almost all kids love those sweet jellies and if it gets combined with their favourite sweet kheer then it turns out to be divine.

Ingredients Serving: 6

  1. Milk 1 litre
  2. Rice 1/4 cup
  3. Cashew 3/4 cup
  4. Almonds 1/4 cup
  5. Cardamom powder, 1/2 teaspoon
  6. Sugar, 1/2 cup or to taste
  7. Jelly crystal pack, 1
  8. Water as mentioned on pack
  9. Ghee 1 teaspoon

Instructions

  1. Take water in a pan and boil it.
  2. Take a bowl and take premix sachet and crystal sachet out of crystal jelly pack and mix them together.
  3. Now start adding boiled water to the mix and keep stirring continuously so that it gets mix properly and gets dissolved.
  4. Now pour into the mold and let it set at room temperature and after that keep it in refrigerator.
  5. Your jelly is ready.
  6. Meanwhile when the jelly is setting prepare the kheer and for that take rice and wash them properly.
  7. Soak the rice in water for 10 minutes.
  8. Soak almonds in warm water.
  9. Take a fry pan add ghee and roast the cashews until slight browned.
  10. Now take a heavy bottomed pan and add milk and rice and stir then boil it and then simmer the flame.
  11. Stir it properly and keep stirring in between too while cooking so that it does not sticks to the bottom.
  12. Meanwhile take 1/2 cup cashews and grind them to a powder form.
  13. Now take this cashew powder and mix into the milk and stir properly.
  14. After 40 minutes the kheer will almost be thick.
  15. Now add sugar, peeled almonds, cardamom powder to the milk and mix everything well and give it a boil on full flame and then simmer again and keep stirring so that sugar dissolves completely.
  16. Your kheer is ready so switch off the flame.
  17. When it reaches room temperature keep it in refrigerator to cool.
  18. Now take a serving glass add the jelly and then pour kheer over it.
  19. Now garnish with cashews and you are done with your delicacy.
  20. Enjoy.
